Easy Recipes to shake up your breakfast routine

Breakfast seems to be the forgotten meal when it comes to recipes. Typically we are all feeling rushed and grabbing whatever we can get our hands on to get out the door in the morning.

Real talk though, I love breakfast. Probably more than most people. I could live on breakfast foods. I put a lot of thought into what I eat each morning. I actually think about it before I go to bed at night.

My kids, however, prefer to eat the same exact thing every morning (you can find the recipe for that delicious oatmeal below). And my dear husband skips breakfast all together. Clearly, they are seriously missing out on some delicious fare.

While I try to throw in some smoothie recipes on a regular basis because I feel like I can really throw in a lot of vegetables and share them with my kids. And they also REALLY aid in digestion, which is great. But, I’d be lying if I said I didn’t wake up wanting something a bit more substantial to go with my morning coffee.

Here are a few of my favorite breakfasts lately. Seriously, that grapefruit parfait is amazing and I could bathe in it.

Warming Green Smoothie

Loaded with anti-inflammatories and antioxidants

  • High Powered Blender


  • 3/4 Cup Spinach
  • 1/2 Cup Kale
  • 1/4 Cup Rolled Oats
  • 1 tsp Cinnamon
  • 1 tsp Turmeric
  • 1/2 tsp Ginger
  • 1/2 Pear
  • 2 Pitted Dates
  • 1 TBSP Flax Seed
  • 1 Cup Almond Milk


  • Combine all the ingredients in a high powered blender and blend until smooth.

Avocado + Egg Toast

This is perfect when you want a savory breakfast that doesn’t take long

  • 1 slice Whole Wheat Bread
  • 1/4 Avocado
  • 1 Egg
  • 1 Pinch Salt + Pepper
  • 1 Sprinkle Everything But the Bagel Seasoning


  • Toast Bread
  • Heat a skillet to low-medium heat. Crack the egg and cook for a few minutes until the egg is cooked to your liking.
  • Mash Avocado and spread over toast
  • Add the egg on top of the avocado toast
  • Sprinkle with salt, pepper, and everything but the bagel seasoning

Grapefruit Yogurt Parfait

Very simple, delicious breakfast for every weekday!

  • 1/2 Grapefruit
  • 3/4 Cup Low-fat Plain Yogurt I like to use Stonefield Plain Yogurt
  • 1/3 Cup Granola
  • 1 Tbsp Honey


  • Slice grapefruit in half and slice off the peel and pith. Slice the grapefruit into pieces
  • Pour yogurt in a bowl and add the grapefruit and granola
  • Drizzle with Honey

Slow Cooker Apple Cinnamon Oatmeal

The perfect make ahead breakfast

  • 2 Lbs apples, peeled and cored
  • 2 Cups Milk
  • 2 Cups Water
  • 2 Cups Steel Cut Oats
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Butter
  • 1 Tsp Cinnamon
  • 2 Tbsp Chia Seeds
  • 1/4 Tsp Salt


  • Spray the slow cooker with cooking spray
  • Spray the slow cooker with cooking spray
  • Serve hot. Garnish with nuts, seeds, cinnamon or fruit if desired
  • Optional to use Instant Pot for 4 minutes and allow to release naturally
